In a large bowl, combine the olive oil, lemon juice, dried herbs, salt, and pepper. Mix well to create a marinade.
Add the boneless chicken breasts to the marinade, ensuring they are well coated. Cover and let them marinate for at least 15 minutes in the refrigerator.
While the chicken is marinating, prepare the mixed vegetables. Chop the zucchini, bell pepper, and onion into bite-sized pieces if not already done.
Preheat a grill or grill pan over medium-high heat.
Once preheated, place the chicken breasts on the grill. Cook for about 6-7 minutes on each side, or until fully cooked through and the juices run clear.
As the chicken is grilling, in a separate large pan, heat a tablespoon of olive oil over medium heat. Add the mixed vegetables and sauté for about 5-7 minutes until they are tender but still crisp. Season with a pinch of salt and pepper.
Once the chicken is cooked, remove it from the grill and let it rest for a few minutes.
Serve the grilled lemon herb chicken with the sautéed mixed vegetables on the side. Optionally, garnish with fresh herbs or a wedge of lemon.
