  • 1.5 cups Mixed beans and lentils
  • 1 cup Tomato base with veggies & spices
  • 1 piece Cornbread
  • 1 tbsp Olive oil
  • 1 medium Onion
  • 2 cloves Garlic
  • 1 medium Bell pepper
  • 1 tbsp Chili powder
  • 1 tsp Ground cumin
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 2 tbsp Cilantro (optional)

Instructions

Chop the onion, garlic, and bell pepper into small pieces.

Heat olive oil in a large pot over medium heat. Add the chopped onion, garlic, and bell pepper. Sauté until the onion is translucent, about 5 minutes.

Add the chili powder and ground cumin to the pot. Stir well to coat the vegetables with the spices.

Pour in the tomato base with veggies & spices and bring to a simmer.

Add the mixed beans and lentils to the pot, stirring to combine.

Season the chili with salt and black pepper. Simmer for 15 minutes to blend the flavors, stirring occasionally.

Ladle the chili into bowls. Serve each with a piece of cornbread on the side.

Garnish with chopped cilantro if desired.
