Slice the red bell pepper, green bell pepper, onion, and zucchini into thin strips.
In a large skillet, heat the olive oil over medium-high heat.
Add the sliced onion to the skillet and sauté for about 2 minutes until it starts to soften.
Add the sliced red bell pepper, green bell pepper, and zucchini to the skillet. Stir well to combine with the onion.
Sprinkle the chili powder, cumin, salt, and black pepper over the vegetables. Stir to evenly coat the vegetables with the spices.
Continue to cook the vegetables for about 5-7 minutes, stirring occasionally, until they are tender and slightly charred.
Warm the small tortillas in a separate dry skillet over medium heat for about 30 seconds on each side until they are pliable.
To assemble the fajitas, place a spoonful of the vegetable mixture onto each tortilla.
Add a generous dollop of salsa and sour cream on top of the vegetables in each tortilla.
Serve the assembled fajitas immediately while hot.
