In a large, deep pan, heat the vegetable oil over medium-high heat to 350°F (180°C). Use a thermometer to ensure the oil reaches the right temperature.
Carefully add a small batch of potato slices to the hot oil, ensuring they are not overcrowded. Fry for about 3-4 minutes, or until they turn golden brown and crispy.
Using a slotted spoon, remove the chips from the oil and place them on a paper towel-lined plate to drain excess oil.
While the chips are still hot, immediately sprinkle them with salt and a little black pepper, adjusting to taste.
Repeat the frying process with the remaining potato slices, ensuring the oil returns to the correct temperature before each batch.
