Using a sharp knife or a mandoline, slice the potatoes very thinly (about 1/8 inch thick). Uniform slices ensure even cooking.

Fill a large bowl with cold water and soak the potato slices for about 15 minutes. This helps remove excess starch, making the chips crispier.

Drain the potato slices and spread them out on a clean kitchen towel or paper towels. Pat them dry thoroughly to remove any excess water, which can cause oil splatter.

In a large, deep pan, heat the vegetable oil over medium-high heat to 350°F (180°C). Use a thermometer to ensure the oil reaches the right temperature.

Carefully add a small batch of potato slices to the hot oil, ensuring they are not overcrowded. Fry for about 3-4 minutes, or until they turn golden brown and crispy.
