Preheat your oven to 400°F (200°C).
Peel and dice the sweet potato into 1-inch cubes.
Mince the garlic cloves and chop the rosemary finely.
In a mixing bowl, combine 1 tablespoon of olive oil, minced garlic, chopped rosemary, salt, and pepper. Add the chicken thighs and toss to coat evenly.
In another bowl, toss the diced sweet potatoes with the remaining 1 tablespoon of olive oil, salt, and pepper.
Place the chicken thighs on a baking sheet and arrange the sweet potato cubes around them.
Roast in the preheated oven for 30-35 minutes, or until the chicken is cooked through and the sweet potatoes are tender and caramelized. You can check the chicken by ensuring it reaches an internal temperature of 165°F (75°C).
Remove from the oven and let it rest for a few minutes before serving.
