In a medium mixing bowl, combine almond milk, chia seeds, maple syrup, and vanilla extract. Stir well to ensure the chia seeds are evenly distributed.

Cover the bowl and place it in the refrigerator. Let the mixture sit for at least 2 hours, or overnight, so the chia seeds can absorb the liquid and thicken.

Peel the mango and slice it into small cubes. You can also blend the mango into a puree if you prefer a smoother texture.

Once the chia seed mixture has thickened, take it out of the refrigerator. Gently stir it again to break up any clumps.
