Ingredients

  • 6 large Eggs
  • 2 cups Fresh spinach
  • 1/2 cup Feta cheese
  • 1/2 medium Onion
  • 2 tablespoons Olive oil
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper

Instructions

Preheat your oven to 375°F (190°C).

Chop the onion finely. In an oven-safe skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.

Add the fresh spinach to the skillet and cook until wilted, about 2 minutes. Season with a pinch of salt and pepper.

In a bowl, whisk the eggs thoroughly. Add the remaining salt and pepper to the eggs.

Pour the eggs over the sautéed onion and spinach in the skillet. Crumble the feta cheese evenly over the top.

Cook on the stovetop for about 5 minutes until the edges start to set.

Transfer the skillet to the preheated oven and bake for 10-15 minutes until the eggs are fully set and the top is lightly golden.

Remove from the oven, allow to cool slightly, and serve warm.
