Preheat the oven to 375°F (190°C).
Cut the chicken breast into bite-sized pieces and slice the onions thinly.
Heat olive oil in a large skillet over medium heat. Add the chicken pieces and cook until browned on all sides, about 5-7 minutes. Remove the chicken and set aside.
In the same skillet, add sliced onions and cook until they are soft and caramelized, about 10 minutes. Remove onions and set aside with the chicken.
In the same skillet, melt 2 tablespoons of butter. Add 1 tablespoon of flour and cook, stirring constantly for about 1 minute.
Gradually whisk in milk and chicken broth, continuing to stir until the sauce thickens, about 3-4 minutes.
Return the chicken and onions to the skillet, combining them with the sauce. Add salt, pepper, and thyme. Mix until everything is well coated with the sauce.
Transfer the mixture to a greased baking dish.
In a small bowl, combine bread crumbs and parmesan cheese. Sprinkle this mixture evenly over the top of the chicken and onion mixture.
Place the baking dish in the preheated oven and bake for 20 minutes or until the top is golden and bubbly.
Remove from the oven and let cool slightly before serving.
