Preheat your oven to 375°F (190°C).
In a large bowl, crack the 6 eggs and whisk them until well beaten. Add 1/2 teaspoon of salt and 1/4 teaspoon of black pepper to the eggs and mix until combined.
In an oven-safe skillet, heat 1 tablespoon of olive oil over medium heat. Add the 1 cup of mixed vegetables to the skillet and sauté for about 3-4 minutes, or until they start to soften.
Pour the beaten egg mixture over the sautéed vegetables in the skillet. Stir gently to distribute the vegetables evenly.
Sprinkle the 1/2 cup of shredded cheese evenly on top of the egg and vegetable mixture.
Cook on the stovetop for about 2-3 minutes, allowing the edges to set slightly.
Transfer the skillet to the preheated oven and bake for 12-15 minutes, or until the frittata is puffed and set in the middle.
Remove the skillet from the oven and let it cool for a few minutes before slicing into wedges. Serve hot or at room temperature.
