Ingredients

  • 700 g flank or sirloin steak
  • 2 heads broccoli florets
  • 2 large carrots
  • 3 cloves garlic
  • 2 tbsp fresh ginger
  • 3 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 2 tbsp olive or neutral oil
  • 2 cups cooked jasmine rice
  • 2 tsp cornstarch
  • 2 tbsp water

Instructions

In a small bowl, mix together the soy sauce and rice vinegar. Set aside.

Heat 1 tablespoon of oil in a large pan or wok over medium-high heat.

Add the minced garlic and ginger to the pan, stirring constantly until fragrant, about 30 seconds.

Add the sliced steak to the pan in a single layer. Sear both sides until browned and just cooked through, about 2-3 minutes per side. Remove the steak from the pan and set aside.

In the same pan, add the remaining 1 tablespoon of oil. Add the broccoli florets and sliced carrots, stir-frying until they are just tender, about 5-7 minutes. Add a splash of water if needed to help steam the vegetables.

Return the steak to the pan with the vegetables, pour the soy sauce and vinegar mixture over the top, and stir everything together.

If using, add the cornstarch mixed with water to the pan to thicken the sauce. Stir well to combine and allow to simmer for an additional 2 minutes until the sauce thickens.

Serve the beef and broccoli stir-fry over cooked jasmine rice.
