Ingredients

  • 3 pieces large eggs
  • 2 slices whole grain bread
  • 1 piece medium tomato
  • 2 tbsp fresh basil
  • 1 tbsp butter or olive oil
  • to taste n/a salt
  • to taste n/a pepper

Instructions

Crack the eggs into a bowl, add a pinch of salt and pepper, and beat them until the yolks and whites are thoroughly mixed.

Heat 1/2 tablespoon of butter or olive oil in a non-stick skillet over medium heat. Once hot, pour the beaten eggs into the skillet.

Allow the eggs to cook without stirring for about 1-2 minutes until the edges start to set.

Sprinkle the diced tomato and chopped fresh basil evenly over one half of the omelette. Use a spatula to lift the edges gently to ensure the eggs are not sticking to the pan.

When the bottom is golden and the top is still slightly runny, fold the omelette in half over the filling. Let it cook for another 1-2 minutes until the inside is fully set.

In a separate pan or toaster, toast the whole grain bread slices to your desired level of crispness.

Serve the folded omelette alongside the toasted whole grain bread. Optionally, you can spread a thin layer of butter or olive oil on the toast for additional flavor. Add additional salt and pepper to taste.
