Cut the chicken breast into bite-sized pieces.
In a bowl, mix the chicken pieces with the tandoori spice mix, 1 tablespoon of olive oil, and a pinch of salt and pepper. Ensure the chicken is well coated with the spices.
Heat 1 tablespoon of olive oil in a non-stick pan over medium heat.
Add the marinated chicken pieces to the pan and cook for about 5-7 minutes, turning occasionally, until the chicken is cooked through and has a nice golden-brown color.
While the chicken is cooking, prepare the salad by washing and tearing the lettuce into bite-sized pieces. Slice the cucumber and halve the cherry tomatoes.
In a large bowl, combine the lettuce, cucumber slices, and halved cherry tomatoes. Lightly season with salt and pepper.
Add the cooked tandoori chicken pieces to the salad and gently toss everything together until well mixed.
