Preheat your oven to 375°F (190°C) if you prefer toasted bread. Alternatively, you can use a toaster.
Lightly brush the whole-grain bread slices with olive oil if desired. This will add a nice crispiness to the toast. Place the slices on a baking sheet.
Toast the bread slices in the preheated oven for about 5 minutes, or until they are golden and crispy. If using a toaster, simply toast until golden brown.
While the bread is toasting, slice the orange into thin rounds, and set aside.
Once the bread is toasted, spread 30 g of ricotta onto each slice of bread evenly.
Drizzle 1/2 tsp of honey over each ricotta-topped toast.
Top the ricotta and honey with orange slices, arranging them neatly on each slice.
Garnish each toast with fresh mint leaves and a sprinkling of lemon zest to add a refreshing aroma and taste.
Serve immediately, while the toast is warm and the flavors are fresh.
