Mango Chia Pudding

By Nathan Haskins

Total: 4 hours 15 minutes (includes chilling time)
DessertMake-aheadVegan

Ingredients

  • 45 g chia seeds
  • 200 ml almond milk (unsweetened)
  • 100 g fresh mango (diced)
  • 1 tsp maple syrup

Instructions

1

In a medium-sized bowl, whisk together the chia seeds and almond milk until the chia seeds are evenly distributed and there are no clumps.

2

Stir in the maple syrup to the mixture if you prefer a sweeter pudding.

3

Cover the bowl with plastic wrap or transfer the mixture into an airtight container. Refrigerate for at least 4 hours or overnight. This allows the chia seeds to absorb the liquid and thicken into a pudding consistency.

4

Before serving, give the chia pudding a good stir to ensure it's uniformly thick.

5

Divide the pudding into serving bowls or glasses.

6

Top each serving with an equal portion of the diced fresh mango.

7

Serve immediately or keep refrigerated until ready to serve. Enjoy your refreshing Mango Chia Pudding!
