In a medium-sized bowl, whisk together the chia seeds and almond milk until the chia seeds are evenly distributed and there are no clumps.
Stir in the maple syrup to the mixture if you prefer a sweeter pudding.
Cover the bowl with plastic wrap or transfer the mixture into an airtight container. Refrigerate for at least 4 hours or overnight. This allows the chia seeds to absorb the liquid and thicken into a pudding consistency.
Before serving, give the chia pudding a good stir to ensure it's uniformly thick.
Divide the pudding into serving bowls or glasses.
Top each serving with an equal portion of the diced fresh mango.
