Dice the onion, carrots, and bell pepper. Mince the garlic cloves.
In a skillet over medium heat, add the olive oil and sauté the diced onion and minced garlic until the onion is translucent, about 3-4 minutes.
In a 7-quart crockpot, add the sautéed onion and garlic, followed by the diced carrots, bell pepper, and rice.
Place the chicken breasts on top of the vegetables and rice in the crockpot.
Pour in the chicken broth, ensuring that all ingredients are submerged.
Add salt, black pepper, and dried thyme to the crockpot. Stir slightly to combine.
Cover the crockpot and cook on low heat for 4 hours.
After 4 hours, remove the chicken breasts, shred them using two forks, and return the shredded chicken to the pot. Stir well.
Taste the soup and adjust the seasoning with more salt or pepper if needed. Serve hot.
