Crack the eggs into a mixing bowl and add the sugar, salt, and pepper. Whisk together until fully combined and slightly frothy.
Place a non-stick skillet over medium-low heat and melt the butter.
Pour the egg mixture into the skillet. Allow it to cook undisturbed for a moment until it starts to set around the edges.
Using a spatula, gently pull the eggs from the edges to the center, allowing uncooked portions to flow to the edges. Continue this process until the eggs are mostly cooked through but still moist.
Remove from heat just before they are completely cooked, as they will continue to cook slightly from the residual heat.
Serve immediately while hot and garnish with a sprinkle of sugar if desired.
