Ingredients

  • 80 g Rolled oats
  • 200 g Silken tofu
  • 20 g White miso paste
  • 500 ml Low-sodium vegetable broth
  • 80 g Shiitake mushrooms
  • 2 pieces Scallions
  • 1 tsp Sesame oil
  • 1 tsp Toasted sesame seeds
  • 1 tsp Soy sauce or tamari (optional)

Instructions

In a medium saucepan, heat 1 teaspoon of sesame oil over medium heat. Add the sliced shiitake mushrooms and sauté for about 3-4 minutes until they are tender and fragrant.

Add 500 ml of low-sodium vegetable broth to the pan with the mushrooms. Bring the broth to a simmer.

Stir in 80 g of rolled oats and reduce the heat to low. Cook, stirring occasionally, for about 10 minutes or until the oats are soft and have absorbed most of the broth.

While the oats are cooking, cut the silken tofu into small cubes.

In a small bowl, whisk together 20 g of white miso paste with a small amount of hot broth from the saucepan until smooth, then stir this mixture back into the oats.

Gently fold the cubed silken tofu into the oat mixture, being careful not to break the tofu too much.

If desired, add 1 teaspoon of soy sauce or tamari for extra flavor and stir gently to combine.

Once the porridge is well combined and heated through, remove from the heat. Serve the porridge topped with sliced scallions and toasted sesame seeds.
