Cook the brown rice according to package instructions, if not already cooked. Set aside.
In a wok or large frying pan, heat the sesame oil over medium-high heat.
Add the minced garlic and grated ginger. Stir-fry for 30 seconds until fragrant.
Add the lean beef strips to the pan. Stir-fry for about 5-7 minutes, or until they are browned and cooked through.
Add the mixed stir-fry vegetables to the pan. Stir-fry for another 3-5 minutes until the vegetables are vibrant and tender-crisp.
Pour the soy sauce over the beef and vegetables. Toss everything to combine well and cook for an additional minute.
Serve the stir-fry hot over a bed of the cooked brown rice.
