Prepare the ingredients: Clean and slice the mushrooms. Rinse the spinach and pat it dry.
Crack the eggs into a bowl, add salt and black pepper, and whisk until well combined.
Heat olive oil (or butter) in a non-stick frying pan over medium heat.
Add the mushrooms to the pan and sauté for about 5 minutes or until softened.
Add the spinach to the pan and cook for an additional 1-2 minutes, until wilted. Remove the mushroom and spinach mixture from the pan and set aside.
Add the whisked eggs to the pan, swirling to cover the bottom, and cook for about 2 minutes until the edges start to set.
Spread the mushroom and spinach mixture over one half of the omelette. Gently fold the other half over to cover the filling. Cook for another minute.
Place the omelette on a plate and serve it with a slice of whole-grain toast.
