In a large bowl, combine the sliced chicken thighs with shawarma seasoning, 1 tsp salt, and 1/4 tsp black pepper. Mix well to ensure the chicken is evenly coated.
Heat 1 tsp olive oil in a large skillet over medium heat. Add the seasoned chicken thighs and cook for about 8-10 minutes, stirring occasionally, until the chicken is browned and cooked through.
While the chicken is cooking, prepare the salad. In a large salad bowl, combine the mixed salad greens, cherry tomatoes (halved), and sliced cucumber.
Add the cooked couscous to the salad bowl and toss everything together gently.
In a small bowl, whisk together tahini, lemon juice, water, and a pinch of salt until smooth to make the dressing. Adjust the consistency with more water if needed.
Once the chicken is cooked, let it rest for a few minutes before slicing it into bite-sized pieces.
Arrange the sliced chicken on top of the salad and couscous mixture.
Drizzle the tahini dressing over the salad and chicken.
Garnish with fresh parsley and pickles if using. Serve immediately.
