Heat the sesame oil in a large frying pan or wok over medium-high heat.
Add the lean beef strips to the pan, season with salt and pepper, and stir-fry for about 3-4 minutes until browned and cooked through. Remove the beef from the pan and set it aside.
In the same pan, add the stir-fry vegetables and cook for 5-7 minutes until they are tender-crisp.
Return the beef strips to the pan with the vegetables. Pour in the soy-ginger sauce, and toss everything together. Cook for an additional 2-3 minutes until everything is well-coated and heated through.
Serve the stir-fry over a bed of cooked brown rice. Enjoy your meal!
