  • 1/4 cup chia seeds
  • 1 medium mango, diced
  • 1 tbsp honey
  • 1 tsp vanilla extract

In a large mixing bowl, combine 1 cup of almond milk, 1/4 cup of chia seeds, 1 tablespoon of honey, and 1 teaspoon of vanilla extract. Stir well to ensure the chia seeds are evenly distributed throughout the almond milk.

Allow the mixture to sit for 10 minutes, and then stir again to break up any clumps of chia seeds. This will help them to soak evenly.

Cover the bowl with plastic wrap or a lid and place it in the refrigerator for at least 4 hours, or preferably overnight. The chia seeds will absorb the liquid and expand, creating a pudding-like texture.

Once the pudding has set, stir it well again. If desired, you can add a little more almond milk to achieve your preferred consistency.

To serve, divide the chia pudding into bowls or glasses. Top each serving with the diced mango, and if desired, drizzle a little extra honey on top for added sweetness.
