Black Bean & Corn Tacos

Ingredients

  • 1 can (15 oz) Black beans
  • 1 cup Corn
  • 8 pieces Small corn tortillas
  • 1/2 cup Salsa
  • 1 large Avocado
  • 1/4 cup Cilantro
  • 1 tablespoon Olive oil
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Pepper

Instructions

Drain and rinse the black beans in a colander. Set aside to drain completely.

Heat the olive oil in a medium pan over medium heat. Add the corn and sauté for about 3-4 minutes until it starts to brown slightly.

Add the drained black beans to the pan, and stir in the salsa. Cook for an additional 2-3 minutes until everything is heated through. Season with salt and pepper to taste. Remove from heat.

Halve the avocado, remove the pit, and scoop out the flesh into a bowl. Mash the avocado with a fork until creamy. Optionally, add a pinch of salt and pepper.

Warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side, or until pliable and warm.

To assemble the tacos, spread a layer of mashed avocado onto each tortilla. Top with a generous spoonful of the black bean and corn mixture.

Garnish each taco with a sprinkle of fresh cilantro leaves. Serve immediately and enjoy!
