Ingredients

  • 2 pieces whole eggs
  • 2 pieces egg whites
  • 50 g spinach
  • 50 g mushrooms
  • 1 slice whole grain toast
  • 0.5 piece orange
  • 1 tsp olive oil
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Instructions

Heat a non-stick skillet over medium heat and add 1 teaspoon of olive oil.

Slice the mushrooms if they are not pre-sliced. Add them to the skillet and sauté for about 3-4 minutes until they become soft.

Add the spinach to the skillet and cook for an additional 2 minutes until wilted. Remove the mixture from the skillet and set aside.

In a bowl, beat together the whole eggs and egg whites. Add salt and black pepper, mixing well.

Pour the beaten eggs into the skillet. Cook for 1-2 minutes until the bottom starts setting.

Spread the spinach and mushroom mixture evenly over one half of the omelette.

Fold the omelette in half over the filling and continue to cook for another 1-2 minutes. Flip carefully if needed to ensure an even cook.

Toast the whole grain bread slice in a toaster or on a skillet until lightly crisped.

Serve the omelette with the toasted whole grain bread and half an orange on the side.
