Prepare all your ingredients. Make sure the beef is thinly sliced, the broccoli florets are in bite-sized pieces, the red bell pepper is sliced, and the carrot is sliced. Set aside 150 g of already cooked brown rice.
Heat a large skillet or wok over medium-high heat. Add 1 tablespoon of sesame or vegetable oil.
Once the oil is hot, add the garlic and ginger. Stir-fry for about 30 seconds until fragrant.
Add the thinly sliced beef to the skillet. Stir-fry for about 3-4 minutes until browned and just cooked through. Remove the beef from the skillet and set aside.
In the same skillet, add the broccoli, red bell pepper, and carrot. Stir-fry for about 4-5 minutes until they start to become tender but still crisp.
Add the cooked beef back into the skillet with the vegetables. Stir in 1 tablespoon of low-sodium soy sauce. Mix everything well and cook for another 1-2 minutes.
Season with salt and black pepper to taste, if desired.
Serve the beef and vegetable stir-fry over the cooked brown rice. Enjoy your delicious and healthy meal!
