In a small mixing bowl, whisk together 2 large eggs and 1 egg white until well combined. Season with a pinch of salt and pepper to taste.
Heat 1 teaspoon of olive oil or butter in a non-stick skillet over medium heat.
Add 1/2 cup of sliced mushrooms to the skillet and sauté for about 3 minutes, or until they are softened and slightly golden.
Add 1 cup of chopped fresh spinach to the mushrooms and cook for another 2 minutes, stirring occasionally, until the spinach is wilted.
Pour the egg mixture over the cooked spinach and mushrooms in the skillet. Swirl the skillet gently to ensure the eggs cover the vegetables.
Cook the omelette for about 2 minutes, or until the edges start to set. Use a spatula to carefully lift the edges and let any uncooked eggs run underneath.
Fold the omelette in half and cook for an additional 1-2 minutes, or until the omelette is cooked to your desired doneness.
While the omelette is cooking, toast a slice of whole-grain bread until golden brown.
Serve the omelette immediately with the toast on the side. Garnish with fresh herbs if desired.
