Dice the chicken breasts and pork shoulder into bite-sized pieces. Season with salt and pepper.
Peel and chop the onion and garlic. Peel and dice the potatoes into 1-inch cubes.
Heat olive oil in a large pot over medium heat. Add the diced onions and garlic, sauté until translucent.
Add the chicken and pork pieces to the pot, browning them on all sides for about 5-7 minutes.
Pour in the chicken broth, add thyme, bay leaves, and bring the mixture to a boil.
Add the diced potatoes to the pot, reduce heat to low, cover, and let simmer for 30 minutes.
Meanwhile, rinse the rice under cold water until the water runs clear.
After the stew has simmered, add the rinsed rice to the pot. Stir well.
Cover the pot again and let it simmer for another 20 minutes, or until the rice and potatoes are fully cooked.
Adjust the seasoning with salt and pepper to taste before serving.
Serve the stew hot, garnished with fresh thyme if desired.
