In a medium bowl, whisk together the ricotta cheese, eggs, honey, vanilla extract, and lemon zest until well combined and smooth.
In a separate bowl, mix the flour, baking powder, and salt together until evenly combined.
Gradually add the dry ingredients to the ricotta mixture, stirring gently until just combined. Do not overmix; a few lumps are okay.
Heat a non-stick skillet over medium heat and add 1 tablespoon of butter to grease the pan.
Once the butter is melted and sizzling, pour 1/4 cup of batter into the skillet for each pancake. Cook for about 2-3 minutes until bubbles form on the surface and the bottom is golden brown.
Flip the pancakes and cook for an additional 2-3 minutes until the other side is golden brown and cooked through.
Remove the pancakes from the skillet and keep them warm. Repeat the process until all batter is used, adding more butter as necessary to the skillet.
Serve the pancakes warm, drizzled with additional honey and your favorite toppings such as fresh fruit or nuts, if desired.
