Ingredients

  • 1 cup rice
  • 2 tbsp butter
  • 1 medium, finely chopped onions
  • 1 medium, diced carrots
  • 2 medium, chopped tomatoes
  • 1 small, diced potatoes
  • 1 cup milk
  • 1 cup, shredded cheese
  • 1/2 tsp pepper

Instructions

Rinse the rice under cold water until the water runs clear, then drain.

In a large skillet, melt the butter over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.

Add the diced carrots and potatoes to the skillet. Cook for 5-7 minutes until they begin to soften.

Stir in the chopped tomatoes and cook for another 2 minutes until tomatoes are slightly softened.

Add the rinsed rice to the skillet and stir well to combine with the vegetables.

Pour in the milk, stir, and bring to a simmer. Cover the skillet with a lid and reduce the heat to low. Cook for 15 minutes or until the rice is tender and liquid is absorbed.

Sprinkle the shredded cheese, salt, and pepper over the rice. Replace the lid and let it sit for 2 minutes until the cheese is melted.

Gently stir the melted cheese into the rice and vegetables before serving warm.
