Ingredients

  • 2 slices whole-grain bread
  • 1 medium ripe avocado
  • 100 g smoked salmon (lox)
  • 1 half lemon
  • 1 tbsp capers
  • 1/4 tsp black pepper
  • 2 tbsp fresh dill or chives

Instructions

Toast the whole-grain bread slices until they are golden brown and crispy. This usually takes about 3-5 minutes depending on the toaster settings.

While the bread is toasting, cut the ripe avocado in half and remove the pit. Scoop the avocado flesh into a bowl.

Mash the avocado with a fork until smooth. Add salt and black pepper to taste, and mix thoroughly.

Squeeze the juice of half a lemon into the mashed avocado. Stir to combine. This adds flavor and prevents the avocado from browning.

Once the bread is toasted, spread the mashed avocado evenly over the two slices.

On top of the avocado, place the smoked salmon slices, dividing evenly between the two slices of bread.

Sprinkle capers (if using) over the smoked salmon to add a tangy burst of flavor.
