A bright, textural brunch toast that pairs creamy, lemon-kissed avocado with silky smoked salmon atop crunchy whole-grain bread. Peppery arugula and a drizzle of olive oil add freshness and richness — every bite balances creamy, smoky, tangy and crisp for a restaurant-quality open sandwich.
Prep the lemon and arugula: zest the lemon first (zest holds aromatic oils) then cut it in half and squeeze 2 tablespoons of juice into a small bowl, catching any seeds.
