In a small bowl, mix 1 tablespoon of olive oil, 1 tablespoon of lemon juice, 1/4 teaspoon of salt, and 1/4 teaspoon of black pepper to make the dressing.
In a large salad bowl, combine the 50 g of mixed salad greens, 3/4 cup of cooked quinoa, 100 g of roasted sweet potato cubes, 6 halved cherry tomatoes, and 30 g of crumbled feta cheese.
Slice the 120 g of grilled chicken breast into thin strips and add them to the salad bowl.
Drizzle the dressing over the salad and gently toss all ingredients together until well combined.
Serve the salad immediately or refrigerate for up to an hour before serving for a chilled option.
