Beef and Vegetable Stir-Fry

By emensah m

Total: 25 minutes
Main courseAsianStir-fryGluten-free

Ingredients

  • 300 g beef strips
  • 100 g broccoli
  • 100 g bell peppers
  • 2 tbsp soy sauce (gluten-free)
  • 2 tbsp Olive oil
  • 2 cloves garlic
  • 1 tsp ginger
  • 1 tbsp cornstarch
  • 2 tbsp water
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions

1

In a small bowl, mix 1 tablespoon of cornstarch with 2 tablespoons of water to create a slurry. Set aside.

2

In a larger bowl, marinate the beef strips with the soy sauce, minced garlic, grated ginger, salt, and black pepper. Let it sit for 10 minutes to absorb the flavors.

3

While the beef is marinating, cut the broccoli into bite-sized florets and julienne the bell peppers.

4

Heat 1 tablespoon of olive oil in a large frying pan or wok over medium-high heat. Once hot, add the beef strips. Stir-fry for 3-4 minutes until browned but not fully cooked. Remove the beef and set aside.

5

In the same pan, add another tablespoon of olive oil. Add the broccoli and bell peppers. Stir-fry for 3-5 minutes until the vegetables are tender-crisp.

6

Return the beef to the pan with the vegetables. Stir to combine everything evenly.

7

Add the cornstarch slurry to the pan. Stir well to mix it with the other ingredients and let the sauce thicken, cooking for an additional 2-3 minutes.

8

Remove the stir-fry from heat and serve hot. Optionally, garnish with sesame seeds or chopped scallions.
