Mince the garlic and grate the ginger. Slice the green onion into thin rounds, separating the white and green parts.
Heat olive oil in a large skillet or wok over medium-high heat. Add the beef strips, season with salt and pepper, and stir-fry until browned, about 3-4 minutes.
Add the minced garlic, grated ginger, and the white parts of the green onion to the beef. Stir-fry for another minute until fragrant.
Add the mixed stir-fry vegetables to the skillet. Stir-fry for about 4-5 minutes until the vegetables are tender-crisp.
Stir in the cooked jasmine rice, gluten-free tamari, and sesame oil. Toss everything together and stir-fry for another 2 minutes until everything is heated through and well combined.
Garnish with green parts of the green onion. Serve immediately.
