Heat the olive oil in a large skillet over medium-high heat. Add the ground beef and cook until browned, about 5-7 minutes, breaking it apart with a spatula.
Add the sliced onion, minced garlic, chili powder, and ground cumin to the skillet. Stir well to combine with the beef and cook for an additional 2 minutes until the onions begin to soften.
Add the bell peppers to the skillet. Stir and cook for about 3-4 minutes, or until the peppers are tender-crisp.
Season the mixture with salt and black pepper. Taste and adjust the seasoning if necessary.
In a separate pan, add a small amount of oil (if needed) and cook the cauliflower rice over medium heat, stirring occasionally, for about 5 minutes until warm and slightly tender.
Serve the beef and pepper mixture over the cauliflower rice. Garnish with fresh cilantro and a wedge of lime. Squeeze lime over top before eating, if desired.
