Rinse the quinoa under cold water using a fine mesh sieve until the water runs clear. This helps remove any bitterness.
In a medium saucepan, combine the rinsed quinoa and 2 cups of water. Bring the mixture to a boil over medium-high heat.
Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes or until the water is absorbed and the quinoa is fluffy.
Remove the quinoa from heat and let it sit, covered, for 5 minutes. Then fluff it with a fork and let it cool.
While the quinoa is cooling, prepare the salad ingredients: halve the cherry tomatoes and dice the cucumber.
In a large mixing bowl, combine the cooled quinoa, chickpeas, cherry tomatoes, and diced cucumber.
In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper to make the dressing.
Pour the dressing over the salad and toss everything gently to combine and coat the ingredients with the dressing.
Taste and adjust seasoning with more salt and pepper if needed. Serve at room temperature or chilled.
