Ingredients

  • 1 cup quinoa
  • 1 can canned chickpeas
  • 1 whole red bell pepper
  • 1 whole cucumber
  • 0.25 cup parsley
  • 2 tbsp olive oil
  • 1 lemon lemon juice
  • 2 cups water
  • 0.5 tsp salt
  • 0.25 tsp pepper

Instructions

Rinse the quinoa in a fine-mesh strainer under cold running water until the water runs clear. This helps to remove the natural coating, called saponin, which can make quinoa taste bitter.

In a medium saucepan, combine 2 cups of water and 1 cup of quinoa. Bring to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes, or until the quinoa is tender and has absorbed the liquid. Fluff the cooked quinoa with a fork and set aside to cool.

While the quinoa is cooking, prepare the vegetables. Dice the red bell pepper and the cucumber into small pieces. Chop the parsley finely.

Drain and rinse the canned chickpeas under cold running water to remove excess salt and preservatives.

In a large mixing bowl, combine the cooled quinoa, chickpeas, diced red bell pepper, diced cucumber, and chopped parsley.

In a small bowl, whisk together the olive oil, the juice of one lemon, 0.5 teaspoon salt, and 0.25 teaspoon pepper until well combined.

Pour the dressing over the quinoa and vegetable mixture. Toss everything gently until the ingredients are well coated with the dressing.

Taste the salad and adjust seasoning if necessary with additional salt or lemon juice according to your preference.

Serve the quinoa salad at room temperature or chilled. It can be stored in an airtight container in the refrigerator for up to 3 days.
