Preheat the oven to 200°C (400°F).
Peel and cube the sweet potato into bite-sized pieces. Toss them in half of the olive oil, salt, and pepper.
Spread the sweet potato cubes on a baking tray lined with parchment paper. Roast in the preheated oven for 25 minutes or until tender, flipping halfway through.
While the sweet potatoes are roasting, place the salmon fillet on a separate baking tray lined with parchment paper. Drizzle with a bit of olive oil, and season with salt and pepper.
After the sweet potatoes have been in the oven for 10 minutes, place the salmon in the oven and bake for 15 minutes, or until the salmon is opaque and flakes easily with a fork.
Mince the garlic clove. In a large pan, heat the remaining olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
Add the fresh spinach to the pan, season with salt and pepper, and sauté until wilted, about 3-4 minutes.
Serve the baked salmon with roasted sweet potatoes and sautéed spinach on a plate. Garnish with a lemon wedge for squeezing over the salmon before eating.
