Preheat your oven to 200°C (400°F).
Peel and cut the sweet potato into cubes. Toss with half the olive oil, salt, and pepper. Spread the cubes in a single layer on a baking sheet.
Place the baking sheet in the preheated oven and roast the sweet potato for 25-30 minutes, or until tender and slightly caramelized, tossing halfway through.
While the sweet potatoes are roasting, season the salmon fillet with salt and pepper. Place the fillet on a separate baking sheet or oven-safe dish.
Put the salmon in the oven 10 minutes after the sweet potatoes have started roasting, and bake for about 15 minutes, or until cooked through and flaky.
While the salmon and sweet potatoes are baking, heat the remaining olive oil in a large pan over medium heat. Add the minced garlic clove and sauté for about 1 minute until fragrant.
Add the fresh spinach to the pan with a pinch of salt and pepper. Sauté the spinach until wilted, which should take about 3-4 minutes.
Once everything is cooked, plate the roasted sweet potatoes, placing the baked salmon fillet on top or on the side. Add the sautéed spinach to the plate.
Squeeze the lemon wedge over the salmon before serving for added flavor.
