Ingredients

  • 300 g flank steak
  • 8 units corn tortillas
  • 1 unit onion, chopped
  • 1/4 cup cilantro
  • 1 unit lime
  • 1 unit red bell pepper
  • 1 unit green bell pepper
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

Preheat your grill or grill pan over medium-high heat.

In a small bowl, mix 1 tbsp olive oil, juice of half the lime, salt, and black pepper. Use this mixture to marinate the flank steak for about 10 minutes.

Slice the red and green bell peppers into strips. Toss them in 1 tbsp olive oil and a pinch of salt.

Grill the marinated flank steak for about 5-7 minutes on each side, or until desired doneness is achieved. Remove from grill and let it rest.

While the steak is resting, grill the sliced bell peppers for about 5 minutes or until they are slightly charred and tender.

Warm the corn tortillas on the grill for about 30 seconds on each side until they are pliable and slightly charred.

Thinly slice the rested flank steak against the grain.

Assemble the tacos: on each tortilla, place a few slices of flank steak, a handful of grilled bell peppers, some chopped onion and cilantro. Squeeze a little lime juice over the top before serving.
