In a large mixing bowl, mash the ripe banana until smooth.
Add the eggs to the mashed banana and whisk together until thoroughly combined.
Stir in the milk and mix until smooth.
In a separate bowl, combine the flour, baking powder, and salt. Whisk to blend the dry ingredients.
Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Be careful not to overmix.
Heat a nonstick skillet or griddle over medium heat and lightly coat it with vegetable oil.
For each pancake, pour approximately 1/4 cup of batter onto the skillet. Cook until bubbles form on the surface, the edges look set, and the underside is golden brown, about 2-3 minutes.
Flip the pancake and cook for another 1-2 minutes on the other side until golden brown and cooked through.
Repeat with the remaining batter, adding more oil to the skillet as necessary.
Serve the pancakes warm with maple syrup drizzled on top or as desired.
