Ingredients

  • 2 cups Rolled oats
  • 3 medium Bananas
  • 5 large Eggs
  • 2 tsp Baking powder
  • 1.5 cups Milk
  • 0.5 tsp Salt
  • 1 tbsp Vegetable oil

Instructions

In a blender, combine the rolled oats and blend until you achieve a fine oat flour.

Peel and mash the bananas in a mixing bowl until smooth.

Add eggs, milk, mashed bananas, baking powder, and salt into the blender with the oat flour. Blend until the mixture is smooth and well combined.

Preheat a non-stick frying pan over medium heat and lightly grease it with a small amount of vegetable oil or spray with cooking spray.

Pour about 1/4 cup of the batter onto the hot pan for each pancake. Cook until bubbles form on the surface and the edges appear set, about 2 minutes.

Carefully flip the pancakes and cook for an additional 2 minutes on the other side until golden brown.

Repeat with the remaining batter, adding more oil as needed.

Serve the pancakes warm with your favorite toppings such as fresh fruit, yogurt, or honey.
