Preheat a non-stick skillet over medium heat. Add the turkey bacon slices and cook for 3-4 minutes on each side, or until they are crispy to your liking.
While the turkey bacon is cooking, wash and dry the lettuce leaves and set them aside for the wraps.
Slice the tomato into thin slices if not already done, and keep them ready for the wrap assembly.
Once the turkey bacon is cooked, remove it from the skillet and let it cool slightly on a paper towel to absorb any excess grease.
Take one lettuce leaf and spread a small amount of light mayo or Greek yogurt on it as the base.
Place half a slice of tomato on the lettuce leaf, followed by one slice of crispy turkey bacon. Repeat with another half a slice of tomato and another lettuce leaf, creating three wraps in total using six leaves.
Wrap the lettuce leaves tightly to encase the fillings and secure them with a toothpick if necessary.
For the side salad, toss the mixed greens in a bowl with extra-virgin olive oil and lemon juice. Season with salt and black pepper to taste and mix well.
