In a large pot, add 6 cups of water and bring it to a boil over medium-high heat.

Once the water is boiling, add 2 tablespoons of Ceniza de Madera (Wood Ash). Stir well until the ash is dissolved. This process helps to nixtamalize the cornmeal, which makes it more nutritious and changes its texture.

Lower the heat to medium-low and gradually add 2 cups of Maiz Molido (Cornmeal) to the pot, stirring continuously to prevent lumps.

Add 1/2 teaspoon of salt and continue to stir the mixture slowly. Simmer the mixture for about 45 minutes, stirring occasionally. This allows the sofkee to develop its flavors and creamy texture.

Taste the sofkee. If needed, adjust the seasoning by adding more salt.

Once the sofkee has reached a creamy consistency, remove it from heat. Let it cool slightly before serving.
