Rinse the dry lentils under cold water to remove any dust or debris.
Chop the carrots, celery, and onions into small, even pieces. Mince the garlic cloves.
In a large pot, heat the olive oil over medium heat. Add the chopped onions, carrots, celery, and minced garlic. Sauté for about 5-7 minutes until the onions are translucent.
Add the rinsed lentils to the pot along with the vegetable stock, bay leaves, and fresh thyme. Stir to combine.
Increase the heat to high and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 35-40 minutes or until the lentils are tender.
Season the soup with salt and black pepper. Adjust seasoning to taste if necessary.
Remove the bay leaves from the soup before serving. Serve the hot soup alongside whole grain rolls for a complete meal.
