Peel the pear and cut it in half. Remove the core.
In a small saucepan, combine 200 ml of water, the cinnamon stick, and 1 tablespoon of sugar. Bring to a simmer over medium heat.
Add the pear halves to the simmering water. Cover and poach for about 10 minutes, or until the pear is tender. Remove from heat and set aside.
In a medium saucepan, heat 400 ml of milk (or dairy alternative) over medium heat until it begins to simmer.
Slowly whisk in the semolina, stirring continuously to avoid lumps. Reduce the heat to low and continue to stir until the mixture thickens, about 5 minutes.
Stir in 1 tablespoon of honey and 1/4 teaspoon of salt into the semolina porridge. Taste and adjust sweetness if required.
Serve the creamy semolina porridge in a bowl, topped with the poached pear halves. Drizzle a little more honey over the top if desired and sprinkle with 1/4 teaspoon ground cinnamon.
