Ingredients

  • 5 large eggs
  • 1 cup fresh spinach
  • 0.5 cup cherry tomatoes
  • 0.25 cup mozzarella cheese
  • 0.5 tsp salt
  • 0.25 tsp pepper
  • 1 tbsp olive oil

Instructions

Preheat your oven to 350°F (175°C).

Crack the 5 eggs into a mixing bowl and whisk them together with 0.5 tsp of salt and 0.25 tsp of pepper until well combined.

Heat 1 tbsp of olive oil in an oven-safe skillet over medium heat. Add the 1 cup of fresh spinach and 0.5 cup of halved cherry tomatoes to the skillet. Sauté them for about 3-4 minutes until the spinach is wilted and the tomatoes have softened slightly.

Pour the whisked eggs over the spinach and tomatoes in the skillet. Stir gently to evenly distribute the vegetables.

Sprinkle 0.25 cup of mozzarella cheese evenly over the top of the egg mixture.

Let the frittata cook on the stovetop for about 5 minutes until the edges start to set.

Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the frittata is fully set and slightly golden on top.

Remove the frittata from the oven and let it cool for a few minutes before slicing and serving.
