Ingredients

  • 800 g plain Greek yogurt (2% fat)
  • 120 g nut-free granola
  • 400 g mixed berries (strawberries, blueberries, raspberries)
  • 4 tsp honey (or maple syrup)
  • 1 lemon lemon zest

Instructions

Rinse the mixed berries thoroughly and pat them dry with a paper towel. Set aside.

In a medium bowl, combine the plain Greek yogurt with the honey (or maple syrup) and mix until well integrated. Add the lemon zest and gently stir it in.

Prepare four serving glasses or bowls. In each serving glass, layer the ingredients starting with 50g of Greek yogurt mixture at the bottom.

Add a layer of 30g of nut-free granola on top of the yogurt.

Spread 50g of mixed berries over the granola layer. You can slightly press the berries to make a compact layer.

Repeat the layering for another set: 50g yogurt, 30g granola, 50g berries until all the ingredients are used up. The parfait can have multiple layers, ending with a small mound of berries on top.

Optionally, drizzle a tiny bit of extra honey or sprinkle some additional lemon zest on top of each parfait for added flavor and presentation.
