Ingredients

  • 150 g Plain Greek yogurt (2% fat)
  • 30 g Rolled oats
  • 100 g Mixed berries
  • 15 g Sunflower seeds
  • 1 tsp Honey
  • 1/4 tsp Vanilla extract

Instructions

Place the rolled oats in a bowl or a small saucepan. Pour just enough water to cover them and let them soak for 5 minutes to soften slightly.

While the oats are soaking, wash and pat dry the mixed berries. If using large strawberries, slice them into smaller pieces.

In a medium-sized bowl, combine the Greek yogurt, honey, and vanilla extract. Stir well until the mixture is smooth and well integrated.

Once the oats are softened, layer them at the bottom of a glass or serving dish.

Spoon half of the yogurt mixture over the oats, spreading it evenly.

Add half of the mixed berries on top of the yogurt layer.

Repeat the layers by adding the remaining oats, another layer of yogurt, and top with the rest of the mixed berries.

Sprinkle the sunflower seeds evenly over the top layer of berries for a nutritious crunch.

Serve immediately, or refrigerate for up to 30 minutes to allow the flavors to meld before serving.
