Slice the boneless skinless chicken breasts into thin strips.
In a bowl, mix the sliced chicken with 1 tablespoon of olive oil, chili powder, ground cumin, salt, and black pepper. Set aside to marinate for 10 minutes.
Heat the remaining 1 tablespoon of olive oil in a large skillet over medium-high heat.
Add the marinated chicken to the skillet and cook for 5-7 minutes until fully cooked and slightly browned. Remove the chicken from the skillet and set aside.
In the same skillet, add the sliced bell peppers and onion. Sauté for 5-6 minutes, or until softened and slightly charred.
Add the rinsed and drained black beans to the peppers and onions, stirring gently to combine. Cook for 2-3 minutes until heated through.
In a serving bowl, layer the ingredients: start with a base of cooked brown rice, then add the chicken, sautéed peppers and onions with black beans.
Top the bowl with sliced avocado and a squeeze of fresh lime juice. Optionally, garnish with chopped fresh cilantro.
Serve the Chicken Fajita Bowls warm and enjoy your meal!
